To extend the kitchen countertop, we used part of the table and the top of the dismantled bedside table. We connected the two sections securely with aluminum U-profiles. A fold-out supporting structure secures the whole thing to the side of the kitchen. It can be folded downwards, but it's practically never in the way for sitting or sleeping.

Conclusion after camping for a while: we wouldn't want to be without it anymore. Besides the sink and stove, there was originally actually no left space on the kitchen worktop. Now there is. In response to questions about it: there are a few simple plastic grids next to the fridge. To keep the supports perfectly horizontal, we used spacers (2 mm thick) between the supports and the side of the kitchenette. The reason why the back of the shelf does not sit flush against the side wall of the caravan is that that side wall is not straight: that margin is needed to be able to fold the shelf down.

There was also a question about the coffee machine. We use this because it produces coffee using the well-known coffee capsules, while only requiring 12V / 5A (60 watts). Regular Nespresso machines are quite heavy and cannot be found under 1000 watts.
